Maria Luisa Scolastra represents the third «gastronomic» generation of the family. Her mother and grandmother already ran a renowned restaurant at Spello, an old hillside village not far from Foligno. The masterly performance of Luisa’s mother as a cook have been praised by experts down to the present day.
In her youth Maria Luisa didn’t show any interest in carrying on the family tradition. She rather aimed at learning languages and touring the world. Only at the age of 17 when her parents begged her to join them in the restaurant «La Bastiglia» at Spello, she yielded to their request. However, she didn’t feel like being just the right hand of her mother. Over the years she therefore qualified as a sommelier, as a baker and as a confectioner.
Asked to describe her character Maria Luisa says that she is very demanding, scrupulous and stubborn, like mother, like daughter … Luisa often makes recourse to the innumerable recipes of her mother, modifying them according to her own ideas. «All I know I owe to my mother», she says, showing sincere gratitude.
Luisa regards herself to be the author of every dish leaving the kitchen, the plates carrying her very personal signature. Everything is self-made, bread, pasta, vinegar, sauces, desserts. She grows her own fruit and vegetable, raises her own chicken and personally knows the suppliers of the best local produce. Being very strict with herself she also sets very high standards in manufacturing the natural products and dealing with her guests.
